Holiday Recipes: Passover Strawberry Bars
This fantastic recipe for flourless fruit
bars courtesy of Ingredients Inc. is adaptable (use apricot jam if
you like!), fast (prep time is 20 minutes, bake time 45), and was
created specifically with Passover in mind. Wonderful for breakfast,
dessert, or an afternoon snack, these delicious little treats are perfect for
serving or gifting during the holiday.
11/2 cups butter or margarine
2 cups granulated sugar
2 cups matzoh cake meal
1 tablespoon fresh lemon juice
12 ounces strawberry jam (that contains sugar, not corn syrup)
11/2 cups shredded coconut
1 cup chopped pecans
Preheat oven to 350F. Cream butter and sugar with an electric mixer until creamy. Add eggs, mixing well. Add cake meal and lemon juice, mixing well. Place 1/2 of cake-meal mixture evenly in a lightly greased 13- x 9-inch baking dish. Spread jam evenly over the top; sprinkle coconut evenly over jam. Add remaining cake meal batter over coconut; sprinkle with pecans. Bake in preheated oven for 45 to 50 minutes or until lightly browned. Let cool completely before serving. Yields approximately 16-20.
