Easter Treat: Nested-Egg Cupcakes

A busy schedule needn't get in the way of baking a holiday treat perfect for serving at brunch, a party, or an Easter egg hunt. Add a homemade twist to carrot-cake cupcakes baked from a boxed mix by adding our Orange Zest Frosting and topping them off with some sweet decorations. They may not be made from scratch, but they're close enough to homemade for you to take full credit.

Nested-Egg Cupcakes
2 dozen cupcakes baked from a carrot-cake mix
4 cups Orange Zest Frosting (recipe below)
1/2 cup shredded coconut
1/8 cup shredded carrot
2 dozen miniature candy eggs
Frost each cupcake and sprinkle the tops with coconut and a pinch of shredded carrot. Crown with candy eggs and serve. 

 
Orange Zest Frosting
4 ounces cream cheese, softened 
3 tablespoons butter, softened
2 tablespoon orange zest (you can always add a little more to your liking and taste)
3 tablespoons fresh-squeezed orange juice
3 1/2 cups confections sugar
Blend the cream cheese, butter, orange zest, and juice together at low speed until creamy, and then slowly add the sugar until all ingredients are smoothly blended.
