Tater Tot casserole recipe

What’s up with casseroles? It seems every party these days has some fabulous, gooey casserole on the menu. They are making a comeback big-time, and the more retro the better — something we should all give thanks for!

For a fun and satisfying side on Thanksgiving, here’s a version that combines the beloved food of my youth, Tater Tots, with cheese and other sinfully delicious stuff, namely bacon, onion and sour cream. It might not scream "Thanksgiving," but you will be truly floored at how pleased your family will be.

For those who are taking the veggie path on Thanksgiving, you can leave out the bacon and it will still be just as tasty, and worth every minute on the treadmill.

Tater Tot Casserole

  • 1 32-ounce package frozen Tater Tots
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 4 celery sticks chopped
  • 6 slices of bacon, cooked crispy, crumbled
  • 1 16-ounce container sour cream
  • 1½ cups shredded cheddar cheese, divided
  • 1 (10-ounce) can condensed cream of mushroom soup
  • 1 green onion, thinly sliced

Preheat oven to 350° and coat a 9x13-inch casserole dish with cooking spray. Melt butter in large skillet over medium heat. Add onion and celery and sauté until tender, about 10 minutes. Set aside.

Arrange Tater Tots in prepared casserole dish. Pour onions and celery over Tater Tots, and sprinkle with crumbled bacon. In a large mixing bowl, combine sour cream, 1 cup cheese and mushroom soup and spread mixture over the top of the Tater Tots. Sprinkle with remaining ½ cup cheese and chopped green onions. Bake for 50 minutes.

Serves 6 to 8

OMG! This looks so delicious (minus the celery). What a guilty pleasure.

Uhhh....YUM!

I'm going to make this for my son's pot luck at school and it will be a hit!

This is also good with cooked ground beef (minus celery sticks, sour cream and bacon). My kids love it!

Wow...this looks amazing. We always get up early on Thanksgiving and make a breakfast buffet, then snuggle up and watch the Macy's Thanksgiving Day parade. This is making it to the breakfast table this year! Thanks so much.

Have made the same dish, with frozen hash browns instead of tater tots. Really good and easy just mix it all together and place in baking dish.
