Jack o' Lantern Bites

At Halloween parties, there’s always one spread for the adults and one for the kids. But wouldn’t it be dreadfully fun if one scrumptious snack fit all? These appetizers will give guests a start when they arrive, enticing the most finicky eaters (vampires, I’m talking about you) to sink their teeth in.

Ghoulish faces aside, these jack-o’-lantern bites are friendly souls who just want to be gobbled up. All you need is a pumpkin cookie cutter and a few easy ingredients and, abracadabra, you’ve created some party magic.

Jack-o’-Lantern Bites
For toddlers, cut the ham into small strips and slice the apples paper-thin to make them easier to eat.

  • 10 slices of whole grain bread
  • Brown mustard
  • 5 or 6 slices of Black Forest ham, cut into thin strips
  • 1 Granny Smith apple, thinly sliced
  • 2 cups shredded cheddar
  • 4 or 5 black olives
  • 1 red bell pepper

Heat oven to 350º. Use pumpkin cookie cutter to cut each slice of bread into a jack-o’- lantern shape. Spread mustard over each slice, then cover with strips of ham and sliced apple. Sprinkle cheese over pumpkins to cover.  Slice black olives to create eyes. Turn bell pepper on its side and slice horizontally. Cut slices into smaller pieces for mouth. Arrange Jack-o’-lantern bites on baking sheet and bake for 4 to 5 minutes, until cheese is melted.

It's great enjoyed it!

Oh, this looks like so much fun. My daughter and I are going to try this tonight. I will let you know how it turned out.
