mini baked potato recipe

mmm, pass the tiny bacon bits

Hey all you leprechauns, looking for a little something to nibble on while you enjoy that stout? What could be more appropriate on St. Paddy’s Day than a pint…size potato. And in this year of all years. Yes, the United Nations has declared 2008 the year of the potato. So go carb-crazy and indulge in that age-old Irish tradition of suds and spuds. (As if you needed an extra excuse to make this adorable appetizer.)

I know what you’re thinking: Where am I going to find freakishly small baking potatoes? Not to worry. These are actually new potatoes that have been garnished to look like big ones.

Mini Baked Potatoes

  • 10 small new potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • sprinkle of black pepper
  • ¼ cup sour cream
  • 2 tablespoons shredded Irish Cheddar
  • 1 tablespoon chopped chives

Preheat oven to 350º. Toss potatoes with oil, salt and pepper. Transfer to baking sheet and bake 45 minutes. Combine sour cream and cheddar in a small bowl. Cut a cross on the top of each potato, and give it a pinch to open slightly. Stuff with sour cream mixture. Garnish with chives.

Makes 10

So cute! Great idea--nice presentation and cheap to boot. And since so many people aren't eating a lot of potatoes these days thanks to the carbs--somehow elevating this most basic of staples into a festive delicacy--they're a perfect party food!

YUM YUM YUM... absolutely adorable.

These are so cute and totally satisfy my need for all things little. Plus, given that they are so small, they hardly feel like a huge indulgence.

Can I stuff one of those sausage balls into the opening of the potato instead? I think I shall. Om nom nom...

As small as a leprechaun's hat with a taste as big as big as Blarney Castle! I'm all over this idea, I am.
